Wildflower Irish Mead
Wildflower Irish Mead (12% ABV) is the third and final expression in our whiskey-cask aged set. We aged our Wildflower Mead in an Irish oak hogshead whiskey cask from Midleton distillery. It’s a Triple Irish in effect! – Irish wildflower honey, Irish oak and Irish whiskey. These very special casks were seasoned with single pot still Irish whiskey.
The semi-sweet mead from wildflower honey from Paul Kelly’s apiary in Ring, West Cork, the Irish oak from Co. Wicklow and the single pot still Irish Whiskey from Midleton Distillery, East Cork, culminate in a drink that’s light and quite unique.
Tasting Notes: Fragrant floral aromas, on the nose, a beautiful round mouthfeel, fruity with quite delicate flavours of butterscotch, rose petals, orange peel and blossom, vanilla and cocoa from the oak.
Each batch is mixed, fermented and matured with care and passion and attention to sustainability. We use pure honey, local water and yeast in our authentic meads. We don’t use a white wine base and no sugar is added.
Off Dry, low in sulfites and naturally Gluten Free. 70cl bottle.
Serve: Very pale gold in colour, delicate in its finish, it is best served on its own lightly chilled.
Food Pairing: Try with a duck or ham salad or just as pre-dinner sipping.
