50ml Kinsale Atlantic Dry Mead
25ml London Dry Gin
25ml Honey Syrup
20ml Fresh Lemon Juice
lemon zest to garnish
1. Half fill a cocktail shaker with ice and pour in the ingredients
2. Shake until the outside of the shaker begins to frost
3. Strain into a chilled coupe or champagne glass
4. Garnish with a twist of lemon zest and enjoy!

Kinsale Mead Co Tip: To make honey syrup, mix a light flavoured honey 50:50 with warm water and stir to mix. Cool in the fridge. Honey syrup will mix easily into cocktails. If you just add honey without diluting it, it will sit at the bottom of the glass giving you a sweet surprise at the end of the cocktail!
If you want to finish with a flourish, twist or bend the lemon peel so that a light cloud of lemon oils float over the surface of the drink which makes a fantastic addition to the experience.
The Bees Knees is a 1920’s, prohibition era cocktail where they used to disguise the flavour (and the smell!) of the bathtub gin by adding honey and lemon. When you make it with Atlantic Dry Mead, you get the delicious honey flavour, the freshness of lemon juice and the kick of the gin.
