Ingredients
2 measures of Atlantic Dry Mead
tsp honey syrup
splash of fresh lemon juice
Sparkling Wine
Method
1. Half fill a cocktail shaker with ice and pour in the ingredients except for the sparkling wine
2. Shake until the outside of the shaker begins to frost
3. Strain into a chilled coupe or champagne glass
4. Top up with chilled sparkling wine

Kinsale Mead Co Tip: To make honey syrup, mix a light flavoured honey 50:50 with warm water and stir to mix. Cool in the fridge. Honey syrup will mix easily into cocktails. If you just add honey without diluting it, it will sit at the bottom of the glass giving you a sweet surprise at the end of the cocktail!
