This delicious Mead Fizz cocktail went down a treat at Bord Bia – Meet the Makers reception in the beautiful lrish Embassy in London recently.
The talented cocktail whizz Rob Simpson created this cocktail combining Hazy Summer Mead, Skellig Six18 Gin, Poachers Citrus Tonic and Rhubarb Puree, garnished with lemon and thyme.

It was a wonderful opportunity to showcase our mead and catch up with some other Irish drinks producers and celebrate outstanding Irish Businesses and Innovation. And it was great to get out and about in London again after so long.

On St Brigid’s Day the chef paired our meads with Cashel Blue Cheese and Goatsbridge Smoked Trout.
