Summer is here (kinda!) Time for Hazy Summer Mead*

Wild Forest Mead aged in Whiskey Casks from Midleton Distillery

Wild Forest Honey Mead (12% ABV) is a gorgeous traditional mead fermented from a dark, intense Forest honey from Galicia in Northern Spain and aged in Irish oak whiskey casks from Midleton Distillery in Co Cork. These very special casks had been seasoned with single pot still Irish whiskey. We are thrilled with the final flavours of this very special limited edition release.  It’s the very first mead to be aged in Irish whiskey casks.

Tasting Notes: We got goosebumps when we first tasted it.  Lush and honeyed, finished semi sweet with the whiskey tingle very much present, floral and toffee notes, some spice and lingering orchard fruits.

Serve: Best served on its own lightly chilled allowing the honey and whiskey notes to linger.

Naturally Gluten Free. Low in sulfites. 70cl bottle.

Note: Not available to ship to UK addresses except for Northern Ireland.

Store the bottles similar to wine, upright in a cool place away from direct sunlight and they should keep for at least two years.

Once opened, store the bottles upright in the fridge. If you have one of those vacuum pump wine bottle closures that pump out the oxygen, all the better. After that the flavour starts to change a little as the air gets to it. Good to drink still or use in cocktails or cooking.

The Whiskey Cask aged Mead keeps for at least a month  if there’s any left by then.

Mead Food Pairing

Try a warm apple tart and vanilla ice cream or fruit cake with strong cheese to accompany this semi-sweet mead or just as an after dinner sharing. It’s also marvellous with sticky toffee pudding.

Pale gold in colour with wildflowers and cooked honey aromas mixed with a touch of vanilla and spice. Fruity and lush on first taste but with acidity and tangy freshness kicking in and some lingering pot-still notes on the finish. Treat yourself. (Leslie Williams – Irish Examiner)

You’ve done it again. Yet another delight; the perfection of Wild Forest Honey Mead wins over my previous number 1 🙂
This is just right combination of sweetness of honey and the whiskey undertone afterwards. Thank you so much for all your delicious creations! (Lina, Co. Kildare)
