Irish Wildflower honey: This is a beautiful 100% Irish summer wildflower honey from The Chanting Bee Apiary in West Cork (2026 release), a lovely expression of the aromas and flavours of West Cork. Paul Kelly‘s honeybees roam the hedgerows and blossoms, pollinating and collecting the nectar from wild clover, white blackberry blossom and hawthorn or mayflower.
This year’s the weather in May was good locally, but June dry, so the honey harvested has less nectar from blackberry blossom nectar. Paul’s apple and pear orchard is growing so the honey also has more subtle flavours of the orchard fruit and crabapple blossom as well a slight mint hint from holly.
A jar is 340g. This is the honey we used to make our limited edition Irish Wildflower Mead.
