Mead Recipes

Drinking a glass of Kinsale Mead at dinner is lovely, but how about adding those delicious flavours to the meal itself? We have collected recipes from some of Kinsale's finest chefs, and from chefs around Ireland, who have been cooking with mead to create these mouth-watering dishes.
  • Wild Red Mead & Cherry Sorbet

    Wild Red Mead and cherry sorbet, lightly sweetened with honey and fresh orange juice - absolute perfection!
  • Merry Mead Berry Ice Cream

    Our Hazy Summer Mead generously poured over good quality vanilla ice-cream. Add raspberries or strawberries steeped in mead for 10 minutes) and crushed meringue for real garden party vibes. It doesn't get more summery than this!

    Inspired by Neven Maguire's deliciously filling Crab and Corn Chowder recipe, we have swapped out the dry white wine for our Atlantic Dry White Port Barrel Aged Mead. Rich and peppery with a spicy depth, we think this dish is perfection, but that could just be us fishing for compliments..
  • Atlantic Dry Mead Drizzle Cake

    Try our refreshing Atlantic Dry Mead Drizzle Cake. Despite the name, adding Atlantic Dry Mead into the traditional drizzle cake mix keeps it light and zesty and the orange blossom honey really shines through. The crunchy drizzle glaze is always a winning combination with the delicate orange sponge.
  • Atlantic Dry Mead and Lemon Syllabub

    This is a 16th century recipe, a mix of dairy and alcohol, usually with a dry white wine but it's heavenly with Atlantic Dry Mead. Not just for Tudors!
  • Boozy Mead and Chocolate Brownies

    We tried adding some mead into a chocolate recipe. The results were amazing! Fudgy and boozy brownies. Serve with a generous glass of Wild Red Mead.
  • Cherry, Rosewater and Wild Red Mead Panna Cotta

    Rosewater and Cherry with a splash of Wild Red Mead. Fabulous! Pour a glass as an accompaniment.

    A delicious zesty dish that really helps bring out the flavor of the meat. Slow cooking lamb or pork in Hazy Summer Mead along with the oranges gives it a real juicy taste that you can’t beat.
